I’m always on the lookout for a new snack ideas that are simple, tasty, nutritious, and easy on the budget. If you haven’t tried roasted chickpeas, you are missing out! These little crunchy wonders fit the bill on all accounts! They are incredibly versatile little legumes, so if these seasoning ideas don’t suit your tastes, just toss in something that does! It’s that easy.

You will need 1 can of Garbanzo beans (chickpeas is another name for them), rinsed and drained, 2 tsp olive oil, ½ tsp salt, ¼ tsp paprika, 1/8 tsp garlic powder, 1/8 tsp cinnamon, and 1/8 tsp cumin. Rub the chickpeas around in a kitchen towel, or even your hands, to remove the skins from them. Dry, then toss with the seasonings in a bowl. Drizzle in and toss with the oil. Spread on a cookie sheet and bake for 15 minutes in a 400 degree oven. Shake them around a bit and bake another 15 minutes. Shake again and let them go another 10. Once they cook, they will be crunchy and delicious. Store covered if there are any left! This seasoning blend is delicious, but you could use the same method and something simple like ½ tsp salt with 1 tsp creole seasoning, but increase the olive oil to 1 Tbsp. Or use your own favorite seasoning blend and experiment! These are a tasty treat to add to salads, just snack on, and even add to the lunchbox, yours included! Yum!

This lunch was actually for the hubby and has romaine salad, homegrown tomatoes, turkey, swiss, cucumber, and mustard rolls, Babybel cheese, Popchips, roasted chickpeas, green grapes, and a Ghirardelli chocolate square.
